Summer Berry Pancakes

Summer Berry Pancakes


This is my traditional pancake recipe I use all the time jazzed up with Summer berry dip mix added to it 


1 cup of flour (we use all purpose)

1 tablespoon of sugar
3 teaspoons of Baking powder (why not try Epicure Baking powder)
1/2 tea spoon of salt **this can easily be brought down to 1/4 teaspoon and it still tastes fine**
1 egg
1 Cup of milk (we use 2%)
2 tablespoons of oil (we use canola or vegetable)
2 - 3 Tbsp of Summer Berry Dip Mix

Sift your dry ingredients together (flour, salt, sugar, baking powder) into a large bowl *Except the summer berry dip mix*
I tell you to sift it because sometime if flour sits it can clump together in tiny clumps and you wouldn't want to bite into something to find a ball of flour 


Add in your wet ingredients and whisk until smooth.

Now it the time you add in your Epicure Summer Berry Dip Mix, and yes it may change the colour of your batter from white to pink or purple lol

Use 1/4 cup measuring cup to pour your batter into your hot pan.

Using the 1/4 cup measurements you can get 10 -12 pancakes at around 75 calories each

Chipotle Cheddar and bacon Chicken, and cheesy steamed veggies, and wedges

I baked my chicken in the oven with Chipotle cheddar, and bacon dip on top 


Used the purple steamer from Epicure, and added frozen California mix veggies. Microwaved them for 3.5 minutes, added Epicures Mac and Cheese sauce on top then finished steaming the veggies (another 1 minute) Because I was sharing my veggies with my son I added 15g (half a serving) of fresh shredded cheese as soon as it come out of the microwave. I replaced the lid and let the veggies sit for a minute while I got the rest of our supper to our plates.

For the wedges I used a bunch of different dips to see which ones I liked. Chipotle cheddar and bacon, Cheddar, chives, and bacon, Herbed garlic sea salt, and Lemony dill dip , all were amazing!

My entire supper was less then 500 calories (was 475), and if I would have had rice (1/2 cup cooked) instead of the potatoes it would have been 325

Mini Microwave *single serve* Chocolate Cakes

1/4 cup of flour (all purpose is what I used, but don't see why it cant be done with gluten free, rice flour, ect)
6 Tbsp sugar
3 Tbsp Epicures pure Cocoa powder

1/4 Tsp salt
1 egg ( I used medium)
3 Tbsp milk
3 Tbsp vegetable oil
1/2 Tsp Epicure's Vanilla Extract

Put all dry ingredients into a bowl and whisk until blended
Add all wet ingredient to dry mixture and mix until well blended.
Divide the mixture between 3 microwaveable safe bowls (Epicure has these cute little serving dishes complete with lids which are PERFECT for this)

Microwave on high for 1 minute* 1 at a time

*All microwaves are different so I suggest watching your cake cook. Once its nice and fluffy to the eye and the touch its done, You can always insert a fork and pull the middle apart a bit to make sure.

These are super yummy, and so quick to make!

Each serving is 287 calories

Cheesy Scalloped Potatoes

Using the Epicure slicer, slice up 1 medium russet potatoe (peeled) And about 1/4- 1/3 cup of shredded cheese

Place into the Epicure mini baker and add in layers potatoes, then cheese, then potatoes then cheese


Once you have your layers done, pour 2 tbsp. of half and half or table cream over your potatoes and bake for 30 minutes with the lid on, and the last 10 minutes with the lid off. (Bakes at 350 F)

Feel free to add more shredded cheese (like I have) for the last 10 minutes its in the oven. 

This made enough for 2 servings

Spice up your everyday meals

Add some nacho cheese seasoning to your hash browns to jazz them up a little

Add Some Cheese Chives, and bacon dip mix to scrambled eggs, or mashed potatoes, its also good on Baked potatoes too!

Add some 3 onion dip mix to soups, stews, and scrambled eggs for a little kick.

Add some lemon dilly dip mix to a tbsp of butter and drizzle over steamed carrots... with epicure your possibilities are endless

Nacho Cheese Chicken wraps

Nacho chicken wraps! 
You need a tortilla of your favourite flavour, chicken breast, and your favourite wrap toppings like lettuce, mayo, and fresh shredded cheese


Using the epicure steamer steam 1 chicken breast ( mine was 4 oz) for 4 - minutes until fully cooked

Season before or after cooking with Epicures nacho cheese dip mix
Add your favourite toppings
- lettuce
- tomato
- mayo or Miracle whip
- salt and pepper to taste - epicure has amazing sea salt and 4 pepper grinders!
- 1/2 serving of fresh grated cheese

Use your Favorite puff pastry with Epicures appy maker 
Add your favorite breakfast fillings:
- eggs
- cheese
- bacon, sausage, or ham

- even add your favorite Epicure seasonings too! Like 3 onion to the eggs, Or Cheese Chives and Bacon.. Get creative! 

Epicures Chipster - how to make chips

So I have had a few questions from people who are not familiar with Epicure and it's products. I always talk about the chipster and how great it is, so this photo is to show people how easy it is to make your own "healthy" version of potato chips. Seriously this is 1 potato that I seasoned with epicures sea salt.

Peel and slice your potato, place on the chipster in a single layer, season. Microwave for 3:30 - 4 minutes and done! They are crispy just like chips, no added oil! Way better then the fried bagged chips from the store 

Chocolate glaze for mini Doughnuts

Chocolate Glaze for mini donuts

1 cup of powdered sugar
1.5 tbss Epicure Cocoa powder
1/5 Tbsp BUtter or margarine soft (I put mine in the microwave for 8 seconds before I added it to the bowl

1/2 tsp Epicures Vanilla Extract
2 Tbsp Milk

Whisk all ingredients in a bowl until smooth and taste it. If you fin it super sweet like I did add a pinch of salt, seriously a pinch! And whisk like crazy to incorporate. The salt helps brings the sweetness down. Taste again and if needed add a tinny bit more salt.

Dip your donuts in the bowl and wipe extra glaze off
place on a plate or cookie sheet, and let set on the counter - about 10 minutes 

Chicken Noodle Soup

Super easy Chicken soup

2 chicken breasts
2 cups frozen veggies

1 cup bows noodles
3 cups water
3 tbs Epicures Chicken bouillon



(this feeds a family of 5 nicely)

Place chicken frozen or thawed into a slow cooker with frozen veggies and chicken bouillon.
Let cook for 3 hours on high or med high. Add bow noodles at the 3 hour mark and let cook for another hour. If you find it's bland try adding a little bit of epicures sea salt, or herbed and garlic sea salt. Trust me you will not be disappointed 

Epicure's Mini Doughnuts

Epicures Mini Doughnuts!


1 1/4 cup flour
2 tsp epicures baking powder

1/4 tsp salt 
1/2 tsp epicure cinnamon or ginger bread spice, or any other seasoning. This can also be omitted
6 tbsp butter softened (I used margarine and it worked well)
1/2 cup of sugar
1 tsp epicures vanilla
1 egg
2/3 cup of milk
Vegetable oil for brushing the silicon mould

First off cream sugar and butter together. Add egg and milk to mix
In another bowl add all dry ingredients and sift together
Mix the dry and wet mixes together until we'll blended
Preheat oven to 400
Oil your silicone mould
Place mix into a large ziplock bag an. Cut the corner off. Pipe your mix into the mould so it's half full
Bake for 10 - 14 minutes keep an eye on them as you don't want them to burn
Let cool about 5 minutes in the mould
Top with icing, sugars whatever your heart desires

Yoga Tea Latte

Chai tea latte -
1 cup water
1 cup milk 2%
1 tbs yoga tea or chai tea

Make tea as directed once your tea is at desired strength place in epicures frothier and froth. 

Top it off with a little ginger bread spice or cinnamon, or just leave it like that, Make sure to add sugar if you like, but only add half of what you would normally put in your cup 

Blackberries and Butter cream glazed Mini Donuts

I use Epicures Mini Doughnut mould  - sold here ($23.00 - but well worth it)

Ingredients for mini donuts


Ingredients for butter cream glaze


For the glaze I am terrible ad measuring so please bare with me


I used a small block of parkay margarine (1 think its 1/2 cup) softened
Next add some confectionery sugar, and cream together. Do this is 1/4 cup increments until super smooth and thick. Now you'll have to taste test and if you find it sweet (I always find it super sweet) you'll have to add some salt to it... Yes salt. It helps cut the sweetness out. 
I use a pinch at a time, very little and incorporate it well. You wouldn't want to get a super sweet bite followed by a salty bite lol
Next add a cap of vanilla, and a cap of milk (tbsp.) and whisk together until smooth, now if your mixture is still think add (by teaspoon) a little more milk whisking after each addition. Do this until you get your desired consistency. You want it thick enough that it wont run off your donuts but not thick enough that it doesn't coat.

After making a glaze for donuts once or twice you'll get the hang of it and find which consistency you like the best  

Top (place in the middle) with a blackberry, or strawberry/raspberry.. whatever fruit you would like

Easy Chewy Chocolate- Double chocolate or triple chocolate cookies

*this recipe is lacking in pictures, but is really very easy to make*
Ingredients:
1 cup of butter or margarine softened
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups of all-purpose flour
2/3 of a cup cocoa powder
3/4 teaspoon of baking soda
1/4 teaspoon of salt
1 cup of chocolate chips (whateever you kind you like *optional* do not add chocolate chips if just making chocolate cookies)
Directions:
 
Cream together the sugar and butter until smooth and creamy
Add eggs and mix well
Then add all the other ingredients and mix until blended
Drop by table spoon full onto a lightly greased cookie sheet, and bake for 8 - 10 Minutes at 350F
 
These cookies are awesome just plain chocolate, if you feel like adding chocolate chips then go for it! Adding chocolate chips makes a delisious double chocolate cookie, If you feel adventurous try adding 2 different types of chocolate chips for a triple chocolate cookie!
